Pink Bourbon is a rare Arabica variety, prized for its exceptional cup potential rather than yield. When cultivated and processed with care, it is known for its expressive aromatics, floral character, and refined fruit complexity, making it a favourite among specialty roasters.
This lot comes from Finca Las Nubes, located near Aguas Negras, just outside Pitalito in Huila, Colombia. Sitting at high altitude, the farm benefits from ideal growing conditions that allow Pink Bourbon to develop clarity, sweetness, and structure.
The coffee is washed with extended, controlled fermentation. Whole cherries undergo a prolonged cherry fermentation before pulping, followed by a secondary fermentation phase. After washing, the coffee is dried slowly on raised beds over several weeks, allowing the flavours to stabilise and mature within the green bean.
As green coffee, this Pink Bourbon shows strong potential for tropical fruit expression, soft stone-fruit sweetness, and floral notes, often associated with flavours such as passion fruit, peach, and rose, depending on roast style and development.
This is a top-lot selection, harvested selectively and processed in small batches. It is offered as green, unroasted coffee beans, intended for roasting prior to consumption.
