Finca Las Nubes, located high in the hills of Huila near the small township of Aguas Negras and not far from Pitalito, is known for producing exceptional Colombian coffee. At this altitude, coffee matures slowly, developing the density, structure, and aromatic complexity that Huila is famous for, making it a prime location for artisan coffee roasters.
Acquired in 2020 by Claudia Samboni, the farm has a clear vision: to create a long-term legacy centered on quality, variety, and precision processing. Since then, Las Nubes has become a reference point for carefully executed experimental lots of freshly roasted coffee — achieved not through shortcuts, but through meticulous control and patience.
Among the standout varieties cultivated is Pink Bourbon, which has emerged as one of the farm's most accomplished expressions to date, showcasing the excellence of specialty coffee beans.

Process: Anaerobic fermentation, fully washed
After careful selection, the coffee cherries undergo an extended controlled anaerobic fermentation lasting approximately 200 hours.
During this stage, the cherries are fermented in sealed conditions, allowing the natural sugars and microorganisms within the fruit to influence the development of flavour and aroma.
Following fermentation, the coffee is fully washed to remove the remaining fruit material before being carefully dried.
This combination of extended fermentation and washed processing creates a coffee with clarity and structure while allowing the distinctive character of the Pink Bourbon variety to shine through.

A vibrant and expressive cup with notes of passionfruit, rose, watermelon and peach, supported by refined sweetness and a clean, elegant finish.

Anaerobic simply means without oxygen. During this process, coffee cherries are placed in sealed containers where naturally occurring microorganisms interact with the sugars in the fruit.
By carefully controlling time and conditions, producers can encourage greater aromatic complexity and distinctive fruit character.
For this Pink Bourbon, approximately 200 hours of controlled anaerobic fermentation are followed by a fully washed process, helping create a cup that combines expressive flavour with clarity and structure.

Pink Bourbon is prized in specialty coffee for its distinctive flavour potential and aromatic complexity. When grown at high altitude and carefully processed, it can produce exceptionally expressive coffees with vibrant fruit character, floral notes and refined sweetness.
At Origenza, we selected this lot because it represents the kind of coffee we want to showcase — traceable, distinctive and full of character.
We roast our Pink Bourbon carefully in small batches to preserve the character developed at origin and through its extended fermentation process.
